peas and cabbage salad

I bet you haven’t heard of this peas and cabbage salad before. Well, it is not quite popular, to be honest.  The first time I tried it was more than 25 years ago. It was so amazingly good, that I fell in love with it. And I keep on making it every time the weather gets cold. It is not that you can’t make it in summer, but it is so filling and hearty, that I feel like eating it in winter time most.

Why I like this salad

There should be a good reason why I keep on making this peas and cabbage salad for so many years. Actually, there are several.

  • To begin with, it is incredibly quick and easy to make. In the worst case scenario you will need 10 minutes.
  • Secondly, tt calls for only simple ingredients, nothing fancy that you can’t easily find in your supermarket.
  • It is super delicious due to the combination of the main ingredients.
  • It is certainly healthy, full of vitamins and minerals. If you choose the sunflower mayo option, then it is a high-protein salad as well.
  • It definitely won’t break the bank. As I already noted, the ingredients are simple as well as quite inexpensive.
  • The final product is quite versatile. Although I call it a salad, it can also be served as a side dish, burger filling or sandwich topping. And as it the case with me, quite often it can be a main dish (served on a toast or freshly baked homemade bread).

What you need to make healthy peas and cabbage salad

Well, there are four main ingredients that you will need to have in order to make this salad.

  1. Cabbage
  2. Canned peas
  3. Tomato paste or very thick sauce
  4. Mayo (If you are a vegan, then choose a vegan mayo. If you want a healthy (vegan as well) option with more protein, then make sunflower seeds mayo. Even though it may sound complicated, it takes just 2 minutes to prepare. And it is certainly worth the effort.
  5. You may also want to add some salt.

And basically, that is all you need. So, roll up your sleeves and let the cooking begin.

How to make healthy peas and cabbage salad

Once you have all the ingredients, take out your chopping board.

To begin with, cut a quarter of a medium-sized head of cabbage. Then, chop the cabbage thinly. I, personally, like it this way. If you are not sure how thinly you can chop the cabbage, then you can always use a vegetable chopper.

Secondly, add ½ can of drained and rinsed peas.

Add 5 tbsp of tomato paste or thick tomato sauce.

And finally, add 5 tbsp of (vegan) mayo. As I have noted above, l you may want to make your own sunflower seed mayo. In this case, soak 50gr of sunflower seeds for some time, then drain and rinse with clean water. Put them in a blender and add some water, so that the water covers 1 inch above the seeds. For best results, use the aquafaba (the liquid from the peas) instead of water. Then, you will need a good blender. Blend for as long as 1-2 minutes and your healthy mayo is ready. You have kept not only the fats, but also the proteins.

Mix everything together and you are ready to serve your salad. decorate with olives and/or lenmon slices
